My father is moving away from T-Mobile and he's closing the family T-Mobile One account, I am part of the family account, but I want to stay with T-Mobile and Open up my own account, the issue is, how do I do this, and how do I keep my phone number?

Do a transfer of responsibility. The will run a credit check. Keep in mind you will have to pick a "current" plan and will lose on any promotional plan you are on.
