So, one of the major selling points for the Note10+ 5G and 7T Pro 5G were that when the Sprint & T-Mobile merger is completed, these phones would be able to access Sprint's 2.5 gHz 5G network. Yesterday (7/1/2020), it got announced in more cities, I'm in the LA/OC area and I was just wondering if I'll automatically be able to connect, or if I have to wait for a software update.

It is more of a SIM provisioning update that you would need.  The SIM tells your device what bands it can use for its service.  Once your SIM is provisioned to use the service, it will make use of the bands the device supports for service.  5G service is data only currently though and devices usually won’t idle connected to 5G.
