We are travelling from the UK to Los Angeles for 5 nights and then down onto Cancun for 11 nights at the end of June.
As we will need our phones for Google maps, finding restaurants/ leisure activities etc, I am trying to find out if my Google pixel 5 will work on the T mobile network, and what options are for buying a local 30 day SIM card with sufficient Data.

My understanding is that T-Mobile stopped selling their two-week “Tourist SIM”. Maybe it died of COVID.
There are two versions of the Pixel 5 (GTT9Q & GD1YQ). Both have the same LTE bands, so you should be golden, on that count.
I might suggest you check out a T-Mobile MVNO called Mint Mobile or a Verizon MVNO called PagePlus. Either should work with your phone. A lot of MVNOs sell SIMs at Walmart and Best Buy.
