Community Manager Chris here with another installment of the Community Showcase.

This time I thought it would be fun to share some of our favorite recipes! Who doesn't love food??? If you are not a cook and you don't have a favorite recipe,  you could tell us what your favorite food is and see if there is a tasty recipe for us to try.

Ingredients:

  • 12 corn tortillas
  • 2 10.75 oz. cans of Cream of mushroom soup
  • 10.75 oz. can water (use one of the soup cans)
  • 2 large chicken breasts
  • 1 cup roasted green chili (chopped)
  • 4 cups shredded cheese (I like the fiesta blend)
  • 1 tbsp. Olive Oil
  • 1 tbsp. water
  • Salt
  • Pepper
  • Garlic powder

Green Chili Chicken Enchiladas

Servings 4-5
Prep time: 15 min

Cook time: 20 min
Total time:  45 min

Directions:

  1. Preheat oven to 350 degrees. Heat Olive Oil in large sauce pan over medium-high heat.
  2. Lightly salt/pepper both sides of the chicken breasts and sprinkle them with some garlic powder.
  3. Place chicken breasts in the heated sauce pan and add a tbsp. of water. Cover the pan and let cook for 3-5 min. Flip the chicken and cook for another 3-5 min. The chicken is done once the internal temperature reached 165 degrees. Once the chicken is done, shred the breasts.
  4. In a large mixing bowl mix the cream of mushroom soup, water, shredded chicken, and green chili.
  5. Spray a 8x8 baking pan with some nonstick spray and cover the bottom of the pan with 6 corn tortillas. Take half the sauce mix and cover the tortillas then layer 2 cups of cheese. Layer another 6 corn tortillas, the rest of the sauce, and another 2 cups of cheese.
  6. Place the baking pan in the oven and let it bake for 20 minutes. Let it cool for about 10 minutes before serving.

Make these bad boys yourself, then share one of you favorite recipes to keep us all well fed. 😊 Also, if you are not in an area where you can easily get Green Chili or cant take the heat, you can leave it out and have regular chicken enchiladas which are just as tasty.

7 Layer Bars

This is a family recipe that is super simple and no mixing bowls are needed which makes clean-up minimal!

Prep Time: 10 minutes

Cook Time: 25 minutes

Total Time: 35 minutes

Ingredients:

  • 1 stick of margarine/butter
  • 1 1/2 cups of crushed graham crackers
  • 1 cup of coconut flakes
  • 1 cup of butterscotch chips
  • 2 cups of chocolate chips
  • 1 can of sweetened condensed milk
  • 1/4 cup of finely chopped nuts

Directions:

  1. Preheat oven to 325 degrees
  2. Melt butter on a low burner in the bottom of a 9x13 metal pan
  3. Spread crushed graham crackers over the bottom of the pan to mix with the butter
  4. Sprinkle coconut flakes all over
  5. Sprinkle butterscotch chips all over
  6. Sprinkle chocolate chips all over
  7. Gently pour the condensed milk all over the chocolate chips
  8. Sprinkle chopped nuts over the top
  9. Bake for 25 minutes or until the ingredients is slightly melted and light golden brown on the edges.
  10. Cool completely (to speed up cooling you can put the pan in the freezer for 10 minutes)
  11. Cut into squares and ENJOY!

@tmo_amanda   ,   These bars are amazing girl!   I made them with my daughters this last weekend, and super easy and SUPER good.  Ive had to bring the rest in to work with me, to keep me from eating the whole batch, and they are a HUGE hit!      Thank you so much.

@wtssuperpower AWESOME!! Yes, you have to hide them from yourself because you'll find yourself devouring the entire dish! So glad you loved them. 😊 😊

Look like senseless drones on foot around in their masks.  Beaches are even closed, so that leaves human beings with little to do some research, see here.  Then they surprise why human beings get uninterested and simply cross anyway, in spite of the fact that you may be fined up proper right here for breaking the quarantine order.

Slight variation of the “Best Classic Meatloaf” recipe. It has become one of our “go to” recipes.

Mix together:

  1. 1 lb lean ground beef
  2. 1 cup dry bread crumbs
  3. ½ cup chopped onion (we use the sweet variety)
  4. ½ cup milk
  5. 1 large egg
  6. 2 T ketchup
  7. 1 T Worcestershire sauce
  8. 1 t parsley leaves
  9. salt, pepper and garlic to your liking.

Press mixture into loaf pan.

Make a topping by mixing:

  1. ¼ cup ketchup
  2. 2 T brown sugar
  3. 1 t wine vinegar

Pour topping over meat mixture. If you like, you can lay strips of bacon down first. Bake at 350ºF for 55 minutes or until the interior temp reaches 160ºF.
