I will be travelling to the US next month and need a prepaid phone plan, can I just buy them in the NY stores (presumably the one in Times Square)?

All T-Mobile stores and BestBuy locations will be able to sell you a T-Mobile prepaid SIM or eSIM and add funds to that plan so you can get the service that best suits your needs while visiting the US.
